Galus is the Latin word for cock and is thought to have given Gaillac its name. The second hypothesis would be its ancient Gallo-Roman name Galhac, meaning fertile. Situated in the heart of the thousand-year-old Gaillac vineyards, in the Tarn department, in the centre of the Occitanie region, Château de Salettes stands with its towers and surrounding wall in the midst of its vineyards. A charming building full of character, dating from the 13th and 15th centuries, Château de Salettes was the home of the youngest branch of the Toulouse-Lautrec family and later of the d'Hautpoul family. After several centuries of growing vines on the family land, it was in the 1950s that Maurice Gayrard began producing and selling his own wines. At the time, Domaine Gayrard was one of the very first producers of bottled wine in the Gaillac vineyards. During this "era of the bottle", the family vineyard prospered and grew to 13 hectares of vines. Close to Cordes sur Ciel, on the northern edge of the Gaillac vineyards, the estate is located on an exceptional terroir on the edge of the Causses, a land of oaks, stones and truffles.

Montpellier has been renowned for its faculty of medicine since the 14th century. This tradition of science has continued until today. It is here that the most brilliant researchers invented viticulture and modern oenology. Around the School of Agriculture, Montpellier has built up over time the largest center of wine research in the world. The terroirs of Grès de Montpellier, Saint Georges d'Orques, Saint Drézéry and Méjanelle are among the oldest in Languedoc. Over the centuries, the rich aristocrats and doctors of Montpellier have built superb wine castles on these terroirs. They called them their folies (that meands in french crazy, you should understand why when you visit it).
